You can prepare this with the help of the following ingredients: quinoa, dried cranberries, fresh lime juice, salt, water, minced serrano pepper, minced garlic cloves, olive oil, honey, minced cilantro, chopped fresh mint, arugula, minced shallot, washed and dried baby arugula leaves, salt, black pepper, peeled, pitted and diced avocado and peeled and sectioned grapefruit.
In order to prepare this recipe, you need to first toast quinoa in your skillet. Remove the toasted grain from the heat and rinse and drain it using a strainer. Boil water in a saucepan. Add salt into it and add the toasted grain slowly. Cook the mixture for fifteen to twenty minutes. You should then strain it using a fine mesh colander. Transfer it into a bowl and set aside to cool. Mix together lime juice, serrano pepper, garlic, cranberries, honey, olive oil, shallot, cilantro, arugula and mint in another bowl. Add the cooked and cooled grain into the mixture along with salt and pepper. Prepare a salad plate and place baby arugula in it.
